Please give an overview of your role and what this involves on a day-to-day basis.
I would help out in my desk with general tasks, such as reorganising files, inputting historic data and making notes on earnings calls. In the final weeks I undertook a project creating a report on a company, for assessment purposes.
Were you given much responsibility during your placement / internship?
I was given a reasonable amount of responsibility, as I was not supervised when inputting data, and trusted to do it correctly.

Yes, I learnt many quantitative and qualitative skills. These included data analysis and input, excel, and gathering information, as well as soft skills such as how to interact and carry oneself in the office.
