As a Chef Manager, I am responsible for leading the overall food operation, ensuring the delivery of high-quality, safe, and commercially viable food while maintaining excellent customer satisfaction. My role combines culinary expertise with business management, requiring me to oversee kitchen operations, manage teams, control costs, and drive innovation.
I lead and develop my team by setting clear standards, providing training, and creating a positive working environment that promotes consistency and high performance. I am accountable for food safety and compliance, ensuring all legal, health, and company standards are met, including HACCP procedures and allergen management.
From a commercial perspective, I manage budgets, control food and labour costs, and maximise profitability through effective menu planning, waste reduction, and smart purchasing. I analyse sales data and customer feedback to adapt menus and introduce new concepts that align with current food trends and business objectives.
Customer experience is a key focus of my role. I ensure food is presented to a high standard, meets nutritional expectations, and reflects the needs of the customer base. I also engage with stakeholders and clients, representing the business professionally and driving initiatives that enhance the overall dining offer.
Additionally, I contribute to wider business goals such as sustainability and innovation, for example by reducing food waste, sourcing responsibly, and introducing concepts such as plant-based dishes or fermented products to support health and wellbeing trends.
To what extent do you enjoy your programme?

Completing my Level 4 Senior Culinary Chef Apprenticeship has been an incredibly rewarding and enjoyable experience. It has given me the opportunity to develop not only my culinary skills but also my confidence as a leader and decision-maker within the kitchen. I have particularly enjoyed being able to apply new ideas in a real working environment, from developing innovative dishes to leading projects that have had a positive impact on both the team and the business.
Throughout the apprenticeship, I have valued the balance between practical learning and strategic thinking, which has helped me understand the wider responsibilities of a Chef Manager. The support from mentors and the opportunity to challenge myself has pushed me outside of my comfort zone and allowed me to grow both professionally and personally.
Overall, this journey has strengthened my passion for the industry and has motivated me to continue developing, innovating, and striving for excellence in my career.

Throughout my apprenticeship, I have developed a wide range of new skills that have strengthened my ability to perform effectively as a Chef Manager. I have also enhanced my commercial awareness, gaining a deeper understanding of cost control, budgeting, and how to drive sales through menu planning and food trends. This has included analysing performance data and making informed decisions to improve profitability and reduce waste.
In addition, I have developed my innovation skills, particularly in areas such as menu development and incorporating current trends like fermentation and health-focused dishes. My knowledge of food safety, allergen management, and compliance has also significantly improved, ensuring I can operate safely and responsibly at all times.
