Please give an overview of your role and what this involves on a day-to-day basis:
My role involves overseeing food production, menu planning, stock management, cost control, and maintaining audit readiness at all times. I work closely with the team to ensure consistency in presentation, service, and customer experience.
A significant part of my role is mentoring and developing colleagues, particularly apprentices. I support their technical development, encourage professional standards, and help build confidence within a fast-paced working environment.
I also focus on reducing food waste, improving operational efficiency, and driving continuous improvement across the site. I lead by example, promoting teamwork, accountability, and a culture of pride in what we produce.
To what extent do you enjoy your programme?
I particularly value the balance between theory and practical application. The masterclasses and workshops allow me to refresh existing skills while also learning new techniques and approaches, which I am able to apply directly within my role.
The programme has also strengthened my confidence as a leader and mentor, especially when supporting apprentices within my own team. It has encouraged me to analyse decisions more critically and consider the wider impact on performance, cost control, and operational standards.
Overall, I find the programme both challenging and rewarding, and it continues to contribute positively to my professional development.
Skills Development
Have you learnt any new skills or developed existing skills?
From a technical perspective, I have refined my understanding of advanced culinary techniques and improved my ability to simplify dishes while maintaining quality and presentation. The programme has reinforced the importance of precision, planning, and consistency in high-level food production.
More significantly, I have developed stronger leadership and management skills. I now approach team development more strategically, taking time to coach and mentor apprentices with clearer structure and purpose. I have also improved my confidence in giving constructive feedback and supporting progression within the team.
In addition, I have strengthened my financial awareness particularly around cost control, waste reduction, and operational efficiency, ensuring decisions made in the kitchen consider both quality and commercial impact.
Overall, the programme has helped me become more reflective, more strategic, and more confident in my role as both a chef and a leader.

How well organised/structured is your programme?
The balance between workshops, masterclasses, and workplace application works well, allowing me to implement learning directly into my role. Deadlines and requirements are clear, and the platform is easy to navigate.
I feel well supported by both the training provider and my apprentice lead, with regular check-ins and constructive feedback that keeps progress on track.
Overall, the structure enables steady development while remaining realistic alongside full-time operational responsibilities.
How much support do you receive from your employer?
There is a clear understanding of the value of the apprenticeship, and I feel encouraged to apply what I learn back into the workplace. I am trusted to take ownership of my development while also knowing support is available when needed.
The encouragement to continue progressing professionally has had a positive impact on both my confidence and performance within my role.
How much support do you receive from your training provider when working towards your qualifications?
Feedback provided on assignments and progress reviews is constructive and helpful, allowing me to understand both strengths and areas for development. I feel comfortable asking questions and seeking clarification when needed, and responses are timely and supportive.
The regular check-ins help maintain momentum and ensure I stay on track, while still balancing the demands of a full-time operational role.

How well do you feel that your qualification (through your training provider) helps you to perform better in your role?
The programme has encouraged me to think more strategically, particularly in areas such as cost control, waste reduction, team development, and maintaining high standards. I am more reflective in my decision-making and more confident when leading and mentoring others.
